
Corvette C8 Transformed into Food Truck Set to Achieve a Guinness World Record

There is a Guinness World Record for nearly every kind of achievement imaginable, including some rather obscure ones. One of these lesser-known records pertains to the fastest food truck, and an entrepreneur from New Jersey aims to set this record using an International-Harvester Metro van. You might think, “That’s way too slow,” but that’s not entirely true: this van is built on a C8-generation Corvette chassis.
According to NorthJersey.com, New Jersey resident LJ Koch constructed the truck, which he named the Vettro, from scratch. He began the project by acquiring a 1950s Metro van that he discovered behind a building in Pine Brook, NJ, and purchased for $400 in July 2018. Originally, he intended to merely restore the vehicle while maintaining its unique patina for his catering business. The project wrapped up just over a year later, with the revamped Metro taking its first trip in September 2019.
Koch's plans changed unexpectedly when he obtained a Corvette donor car. Fast forward to 2025, and the Metro and the Corvette have been combined. The van’s aged appearance is enhanced by LED headlights, wheel arch flares, custom side skirts, and a rear spoiler sizeable enough to serve as a dinner table. The five-spoke wheels reveal the story: underneath the toaster-like exterior lies a Corvette chassis.
While many custom-built, body-swapped vehicles have been documented, this is the first instance of encountering a vehicle that features both a mid-mounted 6.2-liter V8 engine and beer taps. The interior of the van is not utilized for food preparation, as the engine occupies a significant portion of space. However, its rear side panels open to showcase taps on one side (originally from a Snap-On tool chest) and a warming area on the other. It can be assumed that the V8’s heat helps keep those trays warm. Regardless, the Vettro accelerates and sounds just like a Corvette, certainly giving the impression of being the fastest food truck in the world.
Time will reveal if it secures a place in the Guinness Book of World Records. Koch plans to promote the record attempt by bringing the Vettro to the Indy 500 over Memorial Day weekend, with the first timed run set for July 27 at the Indianapolis Motor Speedway prior to the Brickyard 400 NASCAR Cup Series race. Currently, there is no record established for the fastest food truck. Guinness created this category specifically for Koch, meaning even a stock Chevy Corvair Greenbrier running on only half its cylinders could potentially claim the title.
Koch noted that his van would need to reach at least 130 mph to set a record and redefine the concept of “fast food.” While this is significantly lower than the Corvette Stingray’s specified top speed of 194 mph, the Metro is not particularly known for its aerodynamic features.
